I realize there are differences between an American Indian restaurant and an Indian restaurant. The flavors and textures can be (and are) quite different. But, today I am simply going to communicate my fondness for American Indian cuisine. I have visited several of these monumental habitats. I think everyone should take the time to eat this kind of food. I will do my best to explain it to you...

My tastes lean more toward hamburgers, fried chicken, and mashed potatoes. So, I was not in store for this experience. I felt a little intimidated when I opened the menu. I almost felt as if I should turn and run out the restaurant. I decided to let my sister order for me. I would soon find out just what authentic Indian restaurant cuisine is all about! Goodness, help me not be nauseated.

When my order came, I have to say, I was pleasantly surprised. I did not realize just how lovely the aroma of this Indian food would be. Since I am a meat eater, I did find it refreshing that there was a great platter to choose from. Stir Fried Meat Curry was the first to stare me in the face. I opened my mouth and shoveled a bite in. The invasion upon my senses was stupendous! I could not believe that such a challenging taste could agree so well with me! I looked at Miranda (my sister) and saw she was smiling.

A bread which people enjoy is fry bread. It is deep fat fried and when done, honey is poured on top. Other types of toppings are cream, powered sugar, stews or even salsas! "Squaw" bread is another name for this yummy concoction. Whatever way you decide you like it, you will never fail to grab one for the road!

A third dish which I tried was Ginger Chicken. Now, I am used to eating Ginger snap cookies. I really did not associate this seasoning with chicken. I could not wrap my mind around the idea of tasting chicken with this. But then, all of sudden it was in my mouth. I was amazed how delicious this was. It had onions, tomatoes, garlic, coriander, cumin, and turmeric all together in the dish. What a tantalizing combination.

American Indians were very smart in knowing which foods were safe to eat or not. Persimmons, buffalo, potatoes, and yes, cocoa were daily foods for the First Americans. Corn, tomatoes, turkey, squash and acorns were foods found here when the first Europeans arrived. We need to thank the Native Indigenous peoples of this land for the great knowledge we learned from them! My tummy would be so lonely without these morsels!

Spicy Vegetable Cutlets were my next flavorful adventure. They are made with mashed potatoes and vegetables. Once mashed it is mixed with red peppers and salt, made into patties and lightly fried in sunflower oil. The cutlets were served with a tamarind chutney and I was astonished! I enjoyed trying all the courses and will not be afraid to try anything new again. I suppose you can teach an old dog new tricks.

I can not pick my one favorite American Indian restaurant. In my travels across this great land, I have come upon so many. I feel it is important for people (here, in America) to try a bit of our history. The contributions made by each establishment are immeasurable. I have thought about opening my own Italian restaurant because I love to cook and I love to cook Italian food. One of my favorite items to cook is lasagna. I actually cook lasagna for thanksgiving dinner instead of turkey. But whether you are cooking lasagna, manicotti, ravioli, or even pizza, the key is in the pasta sauce. Here is my recipe for great pasta sauce which is the basis for most Italian meals.

I used to use a large soup pan to prepare the sauce but now I use a slow cooker. It is easier because I do not have to stir the sauce as much as I do cooking it over a stove. I do sometimes open the lid on the slow cooker to stir maybe two or three times but other than that the sauce is on its own. You need a food processor for this pasta sauce recipe. And of course you need the slow cooker.

This is a vegetable pasta sauce. I do add chicken or beef sometimes but usually I stick with just vegetables. Grate four medium sized carrots and three baby zucchini squash; then process three cloves of garlic with one large onion; then process one half a stalk of celery along with a bunch of parsley. All of these ingredients go in your slow cooker.

Now cover the ingredients with two 28 ounce cans of diced tomatoes and one eight ounce can of tomato paste. Stir all the ingredients together. Now add the spices. You add one teaspoon each of rosemary, thyme, oregano, marjoram, basil, savory, and sage. Give that a good stir. Now you add about two tablespoons of sugar. The sugar cuts down the acidity of the tomato.

Now you are ready to cook or let the slow cooker cook. You have the setting at the lowest setting. You can stir the sauce a few times in the two hours you will cook it if you like. But it is not like cooking on the stove top you do not have to constantly stir the sauce.

If you are a pasta sauce purest you might not want to use a crock pot. But I have tried both and I do not notice the difference. But the crock pot is a lot more convenient because I do not have to get up and check the flame or make sure I stir to keep if from sticking.

But if you want to use a stove top method raise the sauce first to a boil and then reduce the flame to a low simmer. And keep stirring the sauce so it does not stick to the pan. Once the cook time is over prepare some spaghetti and try out your sauce I am sure you will enjoy it.

Remember to refrigerate your sauce when it cools. I transfer it to a cool pan to let it cool down faster. Now you have a lot of pasta sauce for the week. You can now try some lasagna recipes or other Italian dishes and your meals will taste like ones from an Italian restaurant. - 30543

Sullivans Restaurant, also on the Main Street, offers teas, coffees, light snacks and meals, perfect if you've been out surfing or sailing all morning. There is also a Launderette at the back, open 6 days a week between 9 am and 6 pm. Just off the main street is the Glan Neigr Pub, which serves food from as early as 7 o'clock onwards. So you could go for a brisk early morning walk across the wide sandy beaches and return for a full English breakfast. You could try Sandy's Bistro, a fully licensed outlet open all year round, and offering fresh local lobster and fish, as well as Welsh beef and fresh local produce. Near the village square is Tafarn Y Morfa, a pub offering traditional ales and home-made food.

The village has some interesting clothes stores and on the village square, opposite the convenience store you will find Fat Face, selling designer clothes and accessories. Meanwhile near the entrance to the beach is The Funsport Shop, the place to go if you're keen on learning to windsurf or kite-surf or to get accessories. Now if you are partial to pastries, crepes and savoury galettes, then don't forget to pay a visit to Mojo's, the village bakery and creperie, where you can enjoy a continental style breakfast.
